Ingredients for 4 people

  • 4 firm apple, for example Jonagold or Boskoop
  • 80 g rolled oats
  • 40 g walnuts, roughly chopped
  • 30 g raisins
  • 1 tsp ground cinnamon
  • 10 tbsp maple syrup
  • 10 tbsp oil
  • 400 g soy yoghurt, plain

Method

  1. Preheat the oven to 190 degrees.
  2. Remove the core from the apples with an apple corer or a small knife. Leave the bottom closed so the filling stays in.
  3. Mix the oats, walnuts, raisins, cinnamon, maple syrup and oil.
  4. Fill the apples and put them in a small ovenproof dish. Pour a 1 cm layer of water into the dish.
  5. Bake for 25 to 30 min until the apples are soft. Serve warm with a generous spoonful of soy yoghurt.

Tip

This does not reach 12 g of protein. Stir 1 tbsp of peanut butter into the yoghurt or have a glass of soy milk with it.
