Potato, leek and white bean bake

Ingredients for 4 people

  • 800 g waxy potatoes, peeled, in half cm slices
  • 800 g white beans, canned, drained and rinsed
  • 2 leek, in rings
  • 200 g fresh spinach
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 400 g tomato passata
  • 60 g breadcrumbs
  • 10 tbsp nutritional yeast flakes
  • 10 tbsp olive oil
  • 1 tsp dried oregano
  • to taste salt and pepper

Method

  1. Preheat the oven to 200 degrees. Boil the potato slices for 8 min in salted water, not quite done. Drain.
  2. Sauté the onion and garlic for 3 min in 1 tbsp of olive oil. Add the leek and fry for 5 min.
  3. Stir in the beans, passata and oregano and simmer for 5 min. Let the spinach wilt in it. Season with salt and pepper.
  4. Lay the potato slices overlapping in an ovenproof dish and spoon the bean mixture over them.
  5. Mix the breadcrumbs with the nutritional yeast and the rest of the oil. Sprinkle over it and bake for 25 min until the crust is golden brown.

Tip

The bake can be made a day ahead up to and including step 4. It then goes into the oven cold, allow 10 min extra.
