Ingredients for 4 people

300 g mie noodles
200 g tofu, diced
200 g pak choi, chopped
2 carrot, grated
10 tbsp peanut butter, 100 percent peanut
10 tbsp soy sauce
10 tbsp lime juice
10 tbsp maple syrup
100 ml warm water
1 clove garlic, clove, crushed
to taste peanuts, chopped, to garnish
to taste fresh coriander, to garnish
1 tbsp vegetable oil, for frying

Method

Cook the noodles according to the packet. Drain.
Make the peanut sauce: mix the peanut butter, soy sauce, lime juice, maple syrup, warm water and garlic into a smooth sauce.
Fry the tofu for 5 min until golden brown in a pan with oil.
Stir-fry the pak choi and carrot for 3 min in the same pan.
Add the noodles and the peanut sauce. Mix everything well.
Garnish with chopped peanuts and fresh coriander.
