Toastie with vegan cheese, tomato, mustard and white bean spread

Ingredients for 4 people
- 8 slices wholemeal bread, slices
- 400 g white beans, canned, drained and rinsed
- 200 g vegan grated cheese
- 2 tomato, sliced
- 10 tbsp mustard
- 10 tbsp lemon juice
- 1 clove garlic, clove, crushed
- 10 tbsp olive oil
- to taste salt and pepper
Method
- Mash the white beans with 1 tbsp of olive oil, the lemon juice and the garlic into a coarse spread. Season with salt and pepper.
- Spread four slices with mustard and then with the bean spread.
- Lay the tomato slices on top and sprinkle the vegan cheese over them. Cover with the other four slices.
- Heat a pan or toastie maker. Fry the toasties in the rest of the olive oil for 3 min per side.
- Press them down lightly while frying until the cheese melts. Cut in half.
Tip
Vegan cheese melts more slowly than ordinary cheese. Fry over medium-high heat with a lid on the pan, so the cheese gets the time.
