Toastie with vegan cheese, tomato, mustard and white bean spread

Ingredients for 4 people

  • 8 slices wholemeal bread, slices
  • 400 g white beans, canned, drained and rinsed
  • 200 g vegan grated cheese
  • 2 tomato, sliced
  • 10 tbsp mustard
  • 10 tbsp lemon juice
  • 1 clove garlic, clove, crushed
  • 10 tbsp olive oil
  • to taste salt and pepper

Method

  1. Mash the white beans with 1 tbsp of olive oil, the lemon juice and the garlic into a coarse spread. Season with salt and pepper.
  2. Spread four slices with mustard and then with the bean spread.
  3. Lay the tomato slices on top and sprinkle the vegan cheese over them. Cover with the other four slices.
  4. Heat a pan or toastie maker. Fry the toasties in the rest of the olive oil for 3 min per side.
  5. Press them down lightly while frying until the cheese melts. Cut in half.

Tip

Vegan cheese melts more slowly than ordinary cheese. Fry over medium-high heat with a lid on the pan, so the cheese gets the time.
