Ingredients for 4 people

  • 500 g frozen forest fruits, still frozen
  • 250 g soy yoghurt, plain
  • 10 tbsp maple syrup
  • 10 tbsp lemon juice

Method

  1. Briefly blend the frozen fruit in a powerful blender or food processor until coarsely broken up.
  2. Add the soy yoghurt, lemon juice and maple syrup and blend into a creamy mass. Push the sides down in between.
  3. Taste and add more sweetness if the fruit is sour.
  4. Eat straight away as soft ice cream, or put it in the freezer for 1 to 2 hours for a firmer result.

Tip

Ice cream frozen for longer turns hard. Leave it on the counter for 10 min before scooping.
