Semolina pudding with berry compote

Ingredients for 4 people

  • 700 ml unsweetened soy milk
  • 80 g semolina
  • 60 g sugar
  • 10 tsp vanilla extract
  • 250 g frozen forest fruits
  • 10 tbsp lemon juice
  • pinch salt

Method

  1. Bring the soy milk with 50 g of the sugar, the vanilla and the salt almost to the boil.
  2. Sprinkle in the semolina while stirring and simmer gently for 4 to 5 min until thick. Keep stirring, otherwise it catches.
  3. Divide over four bowls and let it set in the fridge, at least an hour.
  4. Heat the berries with the rest of the sugar and the lemon juice for 5 min into a compote. Serve warm or cold on the pudding.

Tip

Want it gluten-free? Replace the semolina with 45 g of cornflour, the pudding then turns smoother.
