Pasta with tomato and white bean sauce

Ingredients for 4 people
- 400 g penne
- 800 g white beans, canned, drained and rinsed
- 400 g chopped tomatoes, canned
- 1 onion, finely chopped
- 3 cloves garlic, cloves, crushed
- 3 tbsp olive oil
- 2 tsp dried oregano
- 1 tsp chilli flakes
- 20 g fresh basil, leaves
- to taste salt and pepper
Method
- Cook the penne in salted water according to the packet. Scoop 150 ml of cooking water aside and drain.
- Heat the olive oil in a wide pan. Fry the onion for 3 min until translucent.
- Add the garlic, oregano and chilli flakes. Fry for 1 min.
- Add the chopped tomatoes and half the white beans. Simmer for 5 min.
- Purée this part of the sauce smooth with a stick blender.
- Stir the rest of the beans in whole and warm through for 2 min.
- Stir in the pasta with a splash of cooking water until the sauce clings nicely. Season with salt and pepper.
- Scatter the basil over it.
Tip
Puréeing half the beans and leaving half whole gives a creamy sauce with bite.
