Potato curry with peas and tomato

Ingredients for 4 people
- 800 g waxy potatoes, peeled, diced
- 800 g chickpeas, canned, drained and rinsed
- 250 g frozen peas
- 400 g diced tomatoes, canned
- 200 ml coconut milk, half a can
- 200 ml vegetable stock
- 1 onion, finely chopped
- 2 cloves garlic, finely chopped
- 2 cm fresh ginger, grated
- 2 tbsp curry powder, or the mild curry mix from Basics
- 10 tbsp fresh coriander, roughly chopped
- 1 tbsp oil for frying
- to taste salt and pepper
Method
- Sauté the onion, garlic and ginger in the oil for 3 min. Add the curry powder and fry for 1 min.
- Add the potatoes, diced tomatoes, coconut milk and stock. Simmer gently for 15 min with the lid on.
- Stir in the chickpeas and peas and cook for another 8 min, until the potatoes are tender and the sauce has thickened a little.
- Season with salt and pepper and scatter the coriander over the top.
Tip
The half can of coconut milk that is left goes into a soup or smoothie. Serve with pitta bread or rice if you are hungrier.
