Chickpea curry with squash and kale

Ingredients for 4 people

  • 800 g chickpeas, canned, drained and rinsed
  • 600 g butternut squash, peeled, diced
  • 200 g kale, chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 cm fresh ginger, grated
  • 2 tbsp curry powder, or the mild curry mix from Basics
  • 400 ml coconut milk
  • 400 g diced tomatoes, canned
  • 300 g basmati rice
  • 10 tbsp lime juice
  • 1 tbsp oil for frying
  • to taste salt and pepper

Method

  1. Put the rice on according to the packet.
  2. Sauté the onion, garlic and ginger in the oil for 3 min. Add the curry powder and fry for 1 min until fragrant.
  3. Add the squash, diced tomatoes and coconut milk. Simmer gently for 15 min with the lid on, until the squash is soft.
  4. Stir in the chickpeas and kale and cook for another 5 min until the kale has wilted.
  5. Season with lime juice, salt and pepper. Serve with the rice.

Tip

The curry is even better the next day, and it can go in the freezer. Cook fresh rice then.
